Caramels

Oh, sweet, sweet caramels!  These creamy, chewy marvels are truly a labor of love.  Our mom used to make them for the holidays, painstakingly stirring them for hours at the stove.  Then, after allowing them to cool, she would cut and individually wrap each one in waxed paper.  It was out favorite holiday treat, and strict limits were placed on how many we were allowed to eat each day.

We updated the recipe a bit- we use organic butter, half and half, and cane sugar.  We also include our favorite extra dark brown organic sugar (for more on that, click here). We use a generous amount of organic vanilla (for more on that, click here). Finally, we sprinkle a bit of sea salt on top before we wrap them.  There’s no way around those hours at the stove, but it’s a good time to invite friends over to chat while you stir, or catch up on the latest season of Serial.  Is all that time worth it?  Taste one and see!  We think you’ll love them as much as we do.
